PREPARE THE NIGHT BEFORE.
Peel medium size potatoes,( one per person) set potato in center of a foot square sheet of heavy duty tinfoil, slice
1/4 inch thick, between slices, sprinkle with garlic salt and pepper to taste, add one tablespoon butter on top and
add sliced onions to taste....wrap the tinfoil up and over the potato and seal..then wrap again in another piece of tinfoil, roast over hot coals, bbq grill or set in a baking pan with lid for one hour, poke for doneness....set aside to cool, store overnight in secure place for breakfast in the morning..Stir up the fire and prepare so you have hot coals .. . Place foiled potatoes on grill or coals to reheat takes about 20-25 minutes... VERY DELICIOUS !..serve with omelette (see recipe below and grilled buttered toast).

YOU WILL NEED A PAIR OF TONGS AND OVEN MITTS .., ZIP LOCK BAGS,,ONE PER PERSON. a DOZEN EGGS, (1-2 eggs per person)
a selection of chopped onions, green pepper, shredded cheese, and chopped ham or crumbled bacon, whatever else you would like to put in an omlette....
teaspoon of mircle whip and tsp of butter...
Have each person take their bag and put their name on it. Then have them crack open 1-2 eggs and
put in bag, add tsp of mircle whip and tsp butter, pinch of onion, green pepper, shredded
cheese and chopped ham or bacon, close the ziplock bag tight, and shake till all is mixed well. Re-open press out all the air, then relock the bag and make sure it is sealed.... put in pot of boiling water standing upright, stand bags side by side........, boil for 15-18 minutes...... check for doneness.....When Omlette is done, it will slide out of bag easily... open bag carefully as not to get burned....tongs are very handy, add the breakfast potatoes and grilled buttered toast and you have a very delicious breakfast..or late morning brunch......, .
GRILLED, BUTTERED TOAST
PLACE A GRILL OVER COALS OR BBQ GRILL....SPREAD BREAD LIGHTLY WITH BUTTER OF YOUR CHOICE OF MARGARINE...., LAY ON GRILL OVER VERY HOT COALS...NO FLAMES........WATCH AND TURN ACCORDINGLY WITH TONGS...THIS , SHOULD NOT TAKE MORE THAN 5 MINUTES TO DO BOTH SIDES.....WRAP IN FOIL TILL REST OF MEAL IS READY BY SETTING ASIDE ON HEATED GRILL.........
AND WHEN THE SUN COMES UP !
